Food on Demand: Menu changes for Ash Wednesday

Out of respect of those who participate in Ash Wednesday, Chef Miles Reaves at Food on Demanhas added some seafood dishes.

For lunch,  we are featuring Shrimp & Grits, an entree with creamy and slightly sweetened grits mixed with corn and green onions, topped with Cajun spiced grilled shrimp, finished with a smokehouse gravy and cilantro.

For dinner, we will have Caribbean Fish Stew, with lightly breaded cod draped over stewed vegetables in a coconut milk and tomato based sauce, served over rice and garnished with toasted coconut. In addition, we will also feature a dill and panko crusted tilapia over a cucumber and couscous salad.

So those who can’t eat meat in recognition of today, we’ve got options for you!

Courtney, our dietetic technician, is holding “Have a Sweet Valentine’s Day” with yogurt dipped strawberries. This is a delicious and nutritious low calorie alternative to other candies and sweets!

Also at the Marketplace, we will be having a delicious carved New York strip steak, mustard & herbed glazed salmon, and a hot chocolate bar!

TONIGHT: Help support a fantastic cause in Up ’til Dawn during Kay Kafe night at the Marketplace!

University Dining is teaming up with the St. Jude Up ‘Til Dawn team to help raise funds and awareness for their fantastic cause! In an effort to replicate the St. Jude Cafeteria, Kay Kafe, we have Mac & Cheese at the Pasta Station, Pizza Bagels at the Pizza Station, and Chicken Tenders at the Beach Grill. Tonight! Our first installment of “Recipes From Home”, celebrating Black History Month!

To celebrate Black History Month, we are doing a series of special menus throughout February called “Recipes From Home”. These menus consist of different meals that our chefs bring from their families and house!
